Ingredients
- 1 box cornbread mix, prepared per package instructions
- 2 medium jalapeños, seeded and minced
- ½ medium yellow onion, chopped
- 1 bell pepper, chopped
- 1 pound thick-sliced bacon, cooked and chopped into bits
- 1 ½ cups mayonnaise
- 1 cup ranch dressing
- 1 (28 oz) can diced tomatoes, drained
- 2 (16 oz) cans beans (pinto, kidney, or black), drained and rinsed
- 2 (16 oz) cans sweet corn, drained and rinsed
- 2 cups shredded cheddar cheese
- 1 small bunch green onions, thinly sliced
- Salt and pepper, to taste
Instructions
- Prepare the Cornbread: Cut the prepared cornbread into 1-inch chunks and set aside.
- Make the Salsa: In a large bowl, mix the diced tomatoes, onion, bell pepper, beans, jalapeños, and corn to create a fresh salsa.
- Combine the Dressing: In a separate bowl, mix the mayonnaise and ranch dressing. Season with salt and pepper to taste.
- Build the Trifle: In a large glass serving bowl, start with a layer of cornbread chunks. Add a layer of the salsa mixture on top, followed by a layer of shredded cheddar cheese. Next, add a layer of the mayonnaise mixture, then sprinkle with diced bacon.
- Repeat Layers: Continue layering in the same order—cornbread, salsa, cheese, mayonnaise mixture, and bacon—until the bowl is filled to the top. Finish with a garnish of green onions and any remaining cheese and bacon.
