Easy Mexican Casserole Recipe
Ingredients
- 1 lb lean ground beef
- 1 can Ranch Style beans
- 1 (10-12 oz) bag tortilla chips, crushed
- 1 can Ro-tel tomatoes
- 1 small onion, chopped
- 2 cups shredded cheddar cheese, divided
- 1 packet taco seasoning
- 1 can cream of chicken soup
- ½ cup water
- Sour cream and salsa, for serving
Instructions
- Preheat the oven to 325°F (160°C). In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
- Combine ingredients: Add the Ranch Style beans, Ro-tel tomatoes, chopped onion, taco seasoning, cream of chicken soup, and water into the skillet with the cooked beef. Stir everything together and simmer over medium-low heat until all the ingredients are well combined and heated through.
- Prepare the casserole dish: Lightly grease a 9×13-inch casserole dish. Spread a layer of crushed tortilla chips evenly across the bottom.
- Layer the casserole: Pour half of the meat mixture over the chips, spreading it evenly. Sprinkle half of the shredded cheddar cheese over the meat. Repeat with another layer of crushed tortilla chips, the remaining meat mixture, and the remaining cheese.
- Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 20-30 minutes, or until the casserole is bubbly and the cheese is melted.
- Serve: Allow the casserole to rest for 5-10 minutes before serving. Top with sour cream and salsa for added flavor.
