Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup brown sugar
  • ½ cup butter
  • 2 eggs, beaten
  • 2 ⅓ cups mashed overripe bananas

Instructions:

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan.
  2. In a large bowl, combine the flour, baking soda, and salt.
  3. In a separate bowl, use an electric mixer to cream together the brown sugar and butter until smooth.
  4. Add the beaten eggs and mashed bananas to the sugar-butter mixture, stirring until well incorporated.
  5. Gradually fold the banana mixture into the flour mixture, mixing just until combined. Be careful not to overmix.
  6. Pour the batter into the prepared loaf pan, spreading it evenly.
  7. Bake in the preheated oven for approximately 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
