Healthy Pickled Beets Recipe

Ingredients:

  • 8 medium fresh beets
  • 1 cup vinegar
  • 1/2 cup sugar
  • 1 1/2 teaspoons whole cloves
  • 1 1/2 teaspoons whole allspice
  • 1/2 teaspoon salt

Instructions:

  1. Scrub the beets thoroughly and trim the tops to 1 inch. Place the beets in a pot and cover them with water. Bring to a boil, then reduce the heat, cover, and simmer until the beets are tender, approximately 25 to 30 minutes.
  2. Remove the beets from the water and let them cool. Once cooled, peel and slice the beets, then transfer them to a bowl and set aside.
  3. In a small saucepan, combine vinegar, sugar, cloves, allspice, and salt. Bring the mixture to a boil and let it cook for 5 minutes.
  4. Pour the hot vinegar mixture over the sliced beets. Refrigerate for at least 1 hour before serving. Drain the beets before serving.
