Ingredients:

  • 4 large potatoes
  • 2 cups of freshly chopped parsley
  • 1 tablespoon of chicken broth or finely chopped green onions
  • 2 tablespoons of corn starch
  • 1 teaspoon of salt (adjust to taste)
  • 1/2 teaspoon of ground black pepper
  • Oil for frying

Instructions:

Prepare the Potatoes:

  1. Grate the Potatoes: Begin by finely grating the potatoes. Place them in a colander and squeeze out as much moisture as possible using a paper towel or a clean kitchen cloth.

Mix the Ingredients:

  1. Combine Ingredients: In a large mixing bowl, combine the grated potatoes, chopped parsley, green onions (or chives), and corn starch. Season the mixture with salt and pepper to taste.
  2. Mix Thoroughly: Ensure all ingredients are evenly distributed throughout the mixture.

Shape the Potato Squares:

  1. Form the Squares: On a flat surface or large plate, spread the potato mixture into an even layer, about 1/4 inch thick. Cut the mixture into small squares, approximately 1 inch on each side.

Fry the Potato Squares:

  1. Heat the Oil: In a skillet or frying pan, heat the oil to 350°F (175°C).
  2. Fry Until Golden: Fry the potato squares in batches, cooking each side for about 2-3 minutes or until they are golden brown and crispy.
  3. Drain Excess Oil: Remove the fried squares from the oil and place them on absorbent paper to drain any excess oil.
