Homestyle Chicken Noodle Soup

Ingredients

  • 2 tablespoons unsalted butter
  • 1 onion, finely diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups chicken stock
  • 2 bay leaves
  • Kosher salt and freshly ground black pepper, to taste
  • 2 ½ pounds bone-in, skinless chicken breasts
  • 2 ½ cups wide egg noodles
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon freshly squeezed lemon juice (adjust to taste)

Instructions

  1. Sauté the Vegetables: In a large stockpot or Dutch oven, melt the butter over medium heat. Add the diced onion, carrots, and celery, and sauté, stirring occasionally, until they become tender, approximately 3 to 4 minutes.
  2. Add Garlic: Stir in the minced garlic and cook until it becomes fragrant, about 1 minute.
  3. Simmer the Soup: Pour in the chicken stock and add the bay leaves. Season with kosher salt and freshly ground black pepper to taste. Place the chicken breasts into the pot and bring the mixture to a boil. Once boiling, reduce the heat and allow it to simmer, covered, until the chicken is fully cooked, which should take about 30 to 40 minutes.
  4. Prepare the Chicken: Carefully remove the chicken from the pot and let it cool slightly. Once cooled, dice the chicken into bite-sized pieces, discarding the bones.
  5. Cook the Noodles: Return the diced chicken to the pot, along with the egg noodles. Cook until the noodles are tender, approximately 6 to 7 minutes.
  6. Finish and Serve: Remove the soup from heat and stir in the chopped parsley, dill, and freshly squeezed lemon juice. Adjust the seasoning with additional salt and pepper if needed.
  7. Serve: Ladle the soup into bowls and serve immediately for a comforting and flavorful meal.
