Jerk Lemon Pepper Salmon

Jerk Lemon Pepper Salmon

Ingredients:

  • 1 to 2 pieces of salmon (approximately 1 ½ lbs)
  • 2 tablespoons butter
  • 1 tablespoon peanut oil or canola oil
  • 1 lemon, sliced
  • Roasted vegetables (see recipe under “Vegetables”)
  • 2 tablespoons jerk seasoning
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • ½ teaspoon chili powder
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon parsley
  • 2 cloves garlic, minced
  • 1 tablespoon thyme
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon allspice
  • 1 tablespoon brown sugar

For Lemon Pepper Seasoning:

  • 1 tablespoon salt
  • 1 tablespoon cracked black pepper
  • 1 tablespoon lemon zest

Preparation:

  1. Preheat a skillet over medium heat and add the peanut or canola oil.
  2. Rinse the salmon fillets and pat dry with paper towels. Lightly coat them with oil and season all sides with the jerk seasoning and lemon pepper seasoning.
  3. Once the oil in the skillet is hot and shimmering, add the salmon fillets. Sear for 2-3 minutes on each side, until they are slightly charred.
  4. Transfer the salmon to a lightly greased ovenproof dish and arrange the lemon slices on top. Bake in a preheated oven at 375°F (190°C) for 8-10 minutes, or until the salmon is cooked through.
  5. Sprinkle with fresh lemon juice before serving.

Servings: 2-4

Pro Tip: For an extra touch of flavor, ensure the butter begins to brown before adding the salmon. This technique, known as pan-searing, enhances the charred and spiced flavor of the salmon.
