Ingredients

  • ½ cup heavy cream
  • ¼ cup low-carb granular sweetener
  • ½ teaspoon vanilla extract
  • ½ cup sugar-free keto lemon curd, divided

Instructions

  1. In a stand mixer or a large mixing bowl with an electric hand mixer, whip the heavy cream on high speed until firm peaks form, approximately 4 to 6 minutes. The cream should cling to the beater and not fall off when lifted.
  2. Reduce the mixer speed to medium, add the vanilla extract, and gradually incorporate the sweetener. Continue mixing until the whipped cream thickens to a frosting-like consistency. Turn off the mixer.
  3. Gently fold 3 tablespoons of the lemon curd into the whipped cream mixture.
  4. In two dessert or shot glasses, spoon 1 tablespoon of the remaining lemon curd into the bottom of each glass. Layer with 2 tablespoons of the whipped lemon mixture on top.
  5. Repeat the layers of lemon curd and whipped cream until all ingredients are used.
  6. Serve immediately and enjoy!
