Ingredients
- ½ cup heavy cream
- ¼ cup low-carb granular sweetener
- ½ teaspoon vanilla extract
- ½ cup sugar-free keto lemon curd, divided
Instructions
- In a stand mixer or a large mixing bowl with an electric hand mixer, whip the heavy cream on high speed until firm peaks form, approximately 4 to 6 minutes. The cream should cling to the beater and not fall off when lifted.
- Reduce the mixer speed to medium, add the vanilla extract, and gradually incorporate the sweetener. Continue mixing until the whipped cream thickens to a frosting-like consistency. Turn off the mixer.
- Gently fold 3 tablespoons of the lemon curd into the whipped cream mixture.
- In two dessert or shot glasses, spoon 1 tablespoon of the remaining lemon curd into the bottom of each glass. Layer with 2 tablespoons of the whipped lemon mixture on top.
- Repeat the layers of lemon curd and whipped cream until all ingredients are used.
- Serve immediately and enjoy!
