Perfect Ribeye Steak Recipe
Ingredients:
- 1 (24-ounce) bone-in ribeye steak, 2 inches thick, at room temperature
- Kosher salt and freshly ground black pepper, to taste
- 1 tablespoon canola oil
- 3 tablespoons unsalted butter
- 3 cloves garlic, smashed
- 3 sprigs fresh thyme
- 2 sprigs fresh rosemary
Directions:
- Prepare the Steak: Pat both sides of the steak dry using paper towels. Season generously with 1 1/4 teaspoons of kosher salt and 1/2 teaspoon of freshly ground black pepper.
- Heat the Skillet: Heat a medium cast iron skillet over medium-high heat until very hot, about 1-2 minutes. Add the canola oil.
- Cook the Steak: Place the steak in the center of the skillet and cook, turning every 2-3 minutes, until a dark crust forms on both sides. This should take about 12-14 minutes.
- Add Butter and Herbs: Reduce the heat to medium-low. Push the steak to one side of the skillet and add the butter, garlic, thyme, and rosemary to the other side. Tilt the skillet towards the butter and cook until the butter starts to foam, about 30 seconds to 1 minute.
- Baste the Steak: Carefully spoon the foaming butter over the steak for 1-2 minutes, turning the steak once. Continue basting until the steak reaches an internal temperature of 120°F for medium-rare, or until your desired level of doneness.
- Rest and Serve: Let the steak rest for 15 minutes before slicing. Serve immediately for the best flavor and texture.
