Potato Pancakes Recipe

Potato Pancakes

Ingredients:

  • 4 cups cold mashed potatoes
  • 5 slices bacon
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs, well beaten
  • 1/2 cup shredded cheddar cheese

Instructions:

  1. In a large, deep skillet, cook the bacon over medium-high heat until it becomes evenly browned and crispy, which should take approximately 10 minutes. Once done, remove the bacon from the skillet and crumble it. Set the crumbled bacon aside.
  2. Reserve the bacon drippings in the skillet for later use.
  3. In a mixing bowl, combine the cold mashed potatoes, beaten eggs, onion powder, salt, and black pepper. Once well mixed, fold in the crumbled bacon and shredded cheddar cheese.
  4. Form the potato mixture into 8 evenly sized patties.
  5. Reheat the bacon drippings over medium heat. Pan-fry the patties in the skillet until they achieve a golden, crisp texture on both sides. This should take about 4 minutes per side.

These potato pancakes are a delightful combination of crispy and savory, making them an excellent addition to any meal.
