Potato Stuffed with Meat Recipe

Ingredients

For the Potatoes:

  • 3 large potatoes (about 1 kg)
  • 2 tablespoons of olive oil
  • A pinch of salt
  • 150 g grated mozzarella cheese

For the Stuffing:

  • 350 g minced meat
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons of tomato sauce
  • 6 coriander sprigs, chopped
  • 2 tablespoons of olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon curry powder
  • 1 teaspoon paprika
  • 100 g grated mozzarella cheese

Instructions

1. Prepare the Potatoes:

  1. Preheat the oven to 200°C (390°F).
  2. Wash and scrub the potatoes thoroughly, then pat them dry.
  3. Cut each potato in half lengthwise.
  4. Scoop out the flesh from each potato half, leaving about 1/4 inch of flesh around the edges.
  5. Brush the potato skins with olive oil and sprinkle with salt.
  6. Place the potato skins on a baking tray and bake in the preheated oven for 15-20 minutes until crispy.

2. Prepare the Stuffing:

  1. In a pan, heat olive oil over medium heat.
  2. Add the chopped onions and minced garlic, and sauté until golden brown.
  3. Add the minced meat, salt, black pepper, curry powder, and paprika. Cook until the meat is browned and cooked through.
  4. Stir in the tomato sauce and chopped coriander. Cook for another 2-3 minutes.
  5. Remove from heat and let it cool slightly.
  6. Stir in the grated mozzarella cheese into the meat mixture.

3. Stuff the Potatoes:

  1. Remove the crispy potato skins from the oven.
  2. Fill each potato skin with the meat and cheese mixture.
  3. Top each stuffed potato with additional grated mozzarella cheese.

4. Bake:

  1. Return the stuffed potatoes to the oven and bake for another 10-15 minutes until the cheese is melted and bubbly.

5. Serve:

  1. Remove from the oven and let it cool slightly.
  2. Garnish with fresh coriander leaves if desired.
  3. Serve hot and enjoy!
