Potato Stuffed with Meat Recipe
Ingredients
For the Potatoes:
- 3 large potatoes (about 1 kg)
- 2 tablespoons of olive oil
- A pinch of salt
- 150 g grated mozzarella cheese
For the Stuffing:
- 350 g minced meat
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 tablespoons of tomato sauce
- 6 coriander sprigs, chopped
- 2 tablespoons of olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon curry powder
- 1 teaspoon paprika
- 100 g grated mozzarella cheese
Instructions
1. Prepare the Potatoes:
- Preheat the oven to 200°C (390°F).
- Wash and scrub the potatoes thoroughly, then pat them dry.
- Cut each potato in half lengthwise.
- Scoop out the flesh from each potato half, leaving about 1/4 inch of flesh around the edges.
- Brush the potato skins with olive oil and sprinkle with salt.
- Place the potato skins on a baking tray and bake in the preheated oven for 15-20 minutes until crispy.
2. Prepare the Stuffing:
- In a pan, heat olive oil over medium heat.
- Add the chopped onions and minced garlic, and sauté until golden brown.
- Add the minced meat, salt, black pepper, curry powder, and paprika. Cook until the meat is browned and cooked through.
- Stir in the tomato sauce and chopped coriander. Cook for another 2-3 minutes.
- Remove from heat and let it cool slightly.
- Stir in the grated mozzarella cheese into the meat mixture.
3. Stuff the Potatoes:
- Remove the crispy potato skins from the oven.
- Fill each potato skin with the meat and cheese mixture.
- Top each stuffed potato with additional grated mozzarella cheese.
4. Bake:
- Return the stuffed potatoes to the oven and bake for another 10-15 minutes until the cheese is melted and bubbly.
5. Serve:
- Remove from the oven and let it cool slightly.
- Garnish with fresh coriander leaves if desired.
- Serve hot and enjoy!
