Southern Sweet Potato Casserole

Ingredients:

  • 3 cups sweet potatoes
  • 1/2 cup sugar
  • 1/2 cup butter
  • 2 beaten eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup milk

Topping:

  • 1/3 cup melted butter
  • 1 cup light brown sugar
  • 1/2 cup flour
  • 1 cup chopped pecans

Directions:

  1. Boil the sweet potatoes until tender, then mash them thoroughly.
  2. In a large bowl, combine the mashed sweet potatoes with sugar, butter, beaten eggs, vanilla extract, and milk. Mix until smooth.
  3. Transfer the mixture to a 13×9 inch baking dish, spreading it evenly.
  4. For the topping, melt the butter and mix it with the brown sugar, flour, and chopped pecans until well combined.
  5. Sprinkle the topping evenly over the sweet potato mixture.
  6. Bake in a preheated oven at 350°F (175°C) for 25 minutes or until the topping is golden brown and the casserole is heated through.
