Ingredients:

  • 4 sirloin steaks, approximately 1 inch thick
  • Salt and freshly ground black pepper, to taste
  • 2 lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 2 tbsp freshly chopped parsley

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Season the sirloin steaks generously with salt and black pepper.
  3. In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread the potatoes evenly on the prepared baking sheet and bake for 20 minutes.
  4. Meanwhile, heat a large skillet over medium-high heat. Add the steaks and sear for 3-4 minutes on each side, or until they reach your preferred level of doneness.
  5. Remove the steaks from the skillet and let them rest.
  6. In the same skillet, add minced garlic and cook for 30 seconds, or until fragrant. Stir in the butter until it melts and blends with the garlic.
  7. Transfer the cooked steaks to a serving platter and drizzle with the garlic butter.
  8. Serve the steaks alongside the roasted potatoes, garnished with chopped parsley.
