Smothered Chicken Recipe
Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 6 slices bacon, chopped
- 8 ounces mushrooms, sliced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Preparation
- Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium heat. Cook the chicken until golden brown and cooked through, approximately 6-8 minutes per side. Remove from the skillet and set aside.
- In the same skillet, cook the chopped bacon until crispy. Remove the bacon and drain on paper towels.
- Add the sliced mushrooms to the skillet and cook until tender, about 5 minutes.
- Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese, mixing until the cheese is melted and the sauce thickens.
- Stir in the fresh spinach and cook until wilted.
- Add the garlic powder and onion powder, mixing well.
- Return the chicken to the skillet and spoon the sauce over the top. Sprinkle with the cooked bacon and simmer for 5 minutes.
