Grandma’s Homemade Cake
Ingredients:
- 3 large or 4 medium eggs
- 1 lemon yogurt
- Sugar (2 measures of yogurt)
- Flour (3 measures of yogurt)
- Sunflower oil or olive oil (1 measure of yogurt)
- 1 sachet of baking powder (16 grams of baking powder)
- Lemon zest
- Butter and flour (to grease the mold)
- Icing sugar for decoration (optional)
Preparation:
- Preheat the oven to 150ºC (300ºF).
- Beat the eggs and add the sugar, yogurt, sunflower oil, and lemon zest (ensure you only use the yellow part of the zest to avoid bitterness).
- Combine the flour and baking powder, then add this mixture to the wet ingredients and mix thoroughly.
- Grease a mold with butter, sprinkle with flour, and shake off the excess. Pour the batter into the mold. For best results, let the batter rest for 15 minutes before baking.
- Bake the cake. It will be ready when a toothpick inserted into the center comes out clean. (Baking times can vary depending on the oven, so keep an eye on it.)
- Remove the cake from the oven and let it cool slightly. Use a knife to loosen the edges before unmolding.
- Optional: Decorate the cake with a dusting of icing sugar.
