Classic Italian Balsamic Chicken with Mozzarella and Fresh Basil

This timeless recipe, passed down from my beloved Italian grandmother, is a true gem in the kitchen. With its rich flavors and simple preparation, it’s sure to become a family favorite.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 teaspoon olive oil
  • 2 cups grape tomatoes, halved
  • 3 garlic cloves, minced
  • ¼ cup balsamic vinegar
  • 1½ teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1 cup shredded mozzarella cheese
  • ½ cup fresh basil, chopped
  • Additional fresh basil leaves for garnish

Preparation:

  1. Preheat the Oven: Set your oven to 375°F (190°C).
  2. Season the Chicken: Lightly season the chicken breasts with salt and pepper.
  3. Sear the Chicken: Heat olive oil in a large skillet over medium heat. Sear the chicken breasts for 3 to 4 minutes per side until they achieve a golden-brown color.
  4. Prepare the Baking Dish: Transfer the seared chicken to a greased baking dish.
  5. Sauté the Garlic: In the same skillet, sauté the minced garlic for about 1 minute until it becomes fragrant.
  6. Cook the Tomato Mixture: Add the halved grape tomatoes, balsamic vinegar, dried oregano, and dried basil to the skillet. Cook for approximately 5 minutes until the tomatoes begin to soften.
  7. Combine Ingredients: Pour the tomato mixture over the chicken in the baking dish. Evenly sprinkle shredded mozzarella cheese on top.
  8. Bake the Chicken: Place the baking dish in the preheated oven and bake for 20 to 25 minutes, or until the chicken is cooked through and no longer pink inside.
  9. Finish and Serve: Once out of the oven, garnish the dish with freshly chopped basil and additional basil leaves.

Tips and Variations:

  • Cheesy Twist: For an extra layer of flavor, sprinkle Parmesan cheese over the mozzarella before baking.
  • Spicy Option: If you prefer a bit of heat, add a pinch of red pepper flakes to the tomato mixture.
  • Vegetarian Variation: For a vegetarian option, substitute the chicken with thick slices of eggplant, making this dish just as satisfying for non-meat eaters and those watching their weight.
