Classic Italian Balsamic Chicken with Mozzarella and Fresh Basil
This timeless recipe, passed down from my beloved Italian grandmother, is a true gem in the kitchen. With its rich flavors and simple preparation, it’s sure to become a family favorite.
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 teaspoon olive oil
- 2 cups grape tomatoes, halved
- 3 garlic cloves, minced
- ¼ cup balsamic vinegar
- 1½ teaspoons dried oregano
- 1 teaspoon dried basil
- 1 cup shredded mozzarella cheese
- ½ cup fresh basil, chopped
- Additional fresh basil leaves for garnish
Preparation:
- Preheat the Oven: Set your oven to 375°F (190°C).
- Season the Chicken: Lightly season the chicken breasts with salt and pepper.
- Sear the Chicken: Heat olive oil in a large skillet over medium heat. Sear the chicken breasts for 3 to 4 minutes per side until they achieve a golden-brown color.
- Prepare the Baking Dish: Transfer the seared chicken to a greased baking dish.
- Sauté the Garlic: In the same skillet, sauté the minced garlic for about 1 minute until it becomes fragrant.
- Cook the Tomato Mixture: Add the halved grape tomatoes, balsamic vinegar, dried oregano, and dried basil to the skillet. Cook for approximately 5 minutes until the tomatoes begin to soften.
- Combine Ingredients: Pour the tomato mixture over the chicken in the baking dish. Evenly sprinkle shredded mozzarella cheese on top.
- Bake the Chicken: Place the baking dish in the preheated oven and bake for 20 to 25 minutes, or until the chicken is cooked through and no longer pink inside.
- Finish and Serve: Once out of the oven, garnish the dish with freshly chopped basil and additional basil leaves.

- Cheesy Twist: For an extra layer of flavor, sprinkle Parmesan cheese over the mozzarella before baking.
