Castella Cake Recipe

Ingredients

  • 105g of all-purpose flour
  • 80ml of oil
  • 120ml of full cream milk
  • 100g of sugar
  • 6 eggs

Instructions

  1. Preheat Oven: Set your oven to 165°C (330°F) and allow it to preheat.
  2. Prepare Flour: Sift the all-purpose flour and set it aside.
  3. Separate Eggs: Carefully separate the eggs into two bowls: one for egg whites and one for egg yolks.
  4. Combine Oil and Milk: In a bowl, mix the vegetable oil and full cream milk. Ensure the mixture is still hot.
  5. Mix with Flour: Add the hot oil and milk mixture to the sifted flour. Whisk until the texture thickens.
  6. Incorporate Egg Yolks: Add the egg yolks one at a time to the flour mixture, mixing well after each addition until fully incorporated.
  7. Beat Egg Whites: In a separate bowl, beat the egg whites on low speed until they become foamy. Gradually add the sugar in three batches while continuing to mix on medium speed until soft peaks form.
  8. Combine Mixtures: Add a small portion of the beaten egg whites to the yolk mixture and fold gently with a whisk. Transfer this mixture into the remaining egg whites and fold gently until the mixture is even and smooth.
  9. Prepare the Mould: Line a 21 x 21 x 7cm mould with non-stick parchment paper. Pour the batter into the mould.
  10. Bake: Bake the cake in the preheated oven at 165°C for 70-75 minutes.
