One Pot Mexican Rice Casserole

Ingredients
- 1 Pound Ground Beef
- 1 Small Onion, Diced
- Salt & Pepper, To Taste
- 2 Tablespoons Taco Seasoning
- 1 Teaspoon Garlic Powder
- 1 Cup Long Grain White Rice
- 1 1/2 Cups Beef Broth
- 1 15 Ounce Can Corn, Drained
- 8 Ounces Tomato Sauce
- 1/2 Cup Salsa
- 1 Cup Shredded Cheese
Directions
- In a large skillet over medium-high heat, cook the ground beef and diced onion together. Season with salt and pepper to taste. Cook until the beef is no longer pink, and drain any excess grease if necessary.
- Return the skillet to the stove and sprinkle the cooked beef with garlic powder and taco seasoning, mixing well to combine.
- Stir in the long grain white rice, beef broth, drained corn, tomato sauce, and salsa.
- Bring the mixture to a boil. Once boiling, cover the skillet, reduce the heat, and let it simmer for 18-20 minutes until the rice is tender and fully cooked.
- Once the rice is tender, top the casserole with shredded cheese. Place the lid back on the skillet for an additional 2-3 minutes, or until the cheese has melted.
