Smothered Chicken Recipe

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 6 slices bacon, chopped
  • 8 ounces mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Preparation

  1. Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium heat. Cook the chicken until golden brown and cooked through, approximately 6-8 minutes per side. Remove from the skillet and set aside.
  2. In the same skillet, cook the chopped bacon until crispy. Remove the bacon and drain on paper towels.
  3. Add the sliced mushrooms to the skillet and cook until tender, about 5 minutes.
  4. Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese, mixing until the cheese is melted and the sauce thickens.
  5. Stir in the fresh spinach and cook until wilted.
  6. Add the garlic powder and onion powder, mixing well.
  7. Return the chicken to the skillet and spoon the sauce over the top. Sprinkle with the cooked bacon and simmer for 5 minutes.
