Overview:
This delightful dessert is a favorite in our household, especially cherished by my spouse who can’t resist enjoying multiple servings in one go.
Ingredients:
- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup erythritol, or your preferred ketogenic sweetener
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 1 tsp lemon juice
- A pinch of salt
Preparation:
- Blend or process the strawberries until smooth. For a smoother texture, strain the purée through a fine sieve to remove seeds.
- Transfer the strawberry purée into a medium bowl. Whisk in lemon juice, vanilla extract, and erythritol until well combined.
- In a separate large bowl, whip the heavy cream with a pinch of salt until stiff peaks form.
- Gently fold the strawberry mixture into the whipped cream until thoroughly incorporated and smooth.
- Spoon the mousse into individual serving cups. Chill in the refrigerator for at least an hour to set.
- Optionally, garnish with mint sprigs and fresh strawberry slices before serving.
Variations and Tips:
- For a different flavor profile, try using blueberries or raspberries instead of strawberries.
- Add finely chopped nuts or unsweetened coconut flakes to introduce additional texture.
- To achieve a denser, cheesecake-like consistency, gently fold melted cream cheese into the strawberry mixture before combining with whipped cream.
