Slow Cooker Alpine Pork Chops

Introduction

Slow Cooker Alpine Pork Chops are a comforting, family-friendly meal featuring tender pork chops simmered in a rich, creamy sauce with savory herbs, mushrooms, and melted Swiss cheese. The slow cooker does most of the work, allowing the flavors to develop into a hearty, satisfying dinner that’s perfect for busy weekdays or cozy weekend meals.

Description

These slow-cooked pork chops are incredibly juicy and flavorful, thanks to a creamy mushroom sauce that keeps the meat moist during cooking. Swiss cheese adds a subtle nutty richness, while onions and herbs create a delicious Alpine-inspired flavor. Serve over mashed potatoes, buttered noodles, or rice to soak up every bit of the creamy sauce.

Ingredients

  • 4 boneless or bone-in pork chops (about 1 inch thick)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 medium onion, thinly sliced
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 can (10.5 ounces) cream of mushroom soup
  • ½ cup chicken broth
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 cup shredded Swiss cheese
  • ¼ cup heavy cream (optional, for extra richness)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, to thicken)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season both sides of the pork chops with salt, pepper, garlic powder, and onion powder.
  2. Heat olive oil in a skillet over medium-high heat and sear the pork chops for 2–3 minutes per side until lightly browned.
  3. Place the sliced onions and mushrooms in the bottom of the slow cooker.
  4. Arrange the browned pork chops on top of the vegetables.
  5. In a bowl, whisk together the cream of mushroom soup, chicken broth, Dijon mustard, thyme, and dried parsley.
  6. Pour the sauce evenly over the pork chops.
  7. Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the pork is tender.
  8. About 20 minutes before serving, sprinkle the Swiss cheese over the pork chops. Cover until melted.
  9. If you’d like a thicker sauce, stir in the cornstarch slurry and cook on High for another 10–15 minutes.
  10. Stir in the heavy cream if using, garnish with fresh parsley, and serve warm.

Tips

  • Searing the pork chops first adds deeper flavor but can be skipped if you’re short on time.
  • Choose pork chops that are at least 1 inch thick to help prevent them from drying out.
  • Avoid lifting the slow cooker lid during cooking, as it releases heat and increases cooking time.
  • Add the cheese near the end of cooking for the smoothest, creamiest texture.
  • Taste the sauce before serving and adjust the seasoning if needed.

Variations

  • Bacon Version: Add cooked, crumbled bacon for extra smoky flavor.
  • Garlic Lover’s: Double the fresh garlic for a bolder taste.
  • Herb Upgrade: Use fresh thyme and parsley instead of dried herbs.
  • Vegetable Boost: Add baby potatoes, carrots, or green beans during the last few hours of cooking.
  • Lighter Option: Substitute reduced-fat cream of mushroom soup and use half-and-half instead of heavy cream.
  • Cheese Swap: Try Gruyère, mozzarella, or provolone in place of Swiss cheese.

Enjoy!

Serve your Slow Cooker Alpine Pork Chops with creamy mashed potatoes, buttered egg noodles, steamed rice, or crusty bread to enjoy every drop of the rich mushroom sauce. Add a side of roasted vegetables or a crisp green salad for a complete, comforting meal that’s sure to become a family favorite. Enjoy!
